A great recipe to make these crispy, spicy, messy Buffalo Wild Wings at home without deep-frying them or the cleanup.

Ingredients

Chicken
1 lb about 4-6 mixed wings per personThis recipe works for one to two people. Below I have conversions for more.
4 tbsp flour
1 tsp baking powder
Wild sauce
4 tbsp butter
½ cup Franks Red Hot sauce

Directions

Adjust oven rack to upper-middle position and preheat oven to 450°F (230°C). Line a rimmed baking sheet with aluminum foil and set a heat-proof wire rack inside.

Bake for 30 minutes; flip and continue to cook until crisp and golden brown, (about 20-30 minutes longer), until golden browned and crispy. If you have an internal thermometer you only have to cook to 170 degrees, to be safe but I feel going to 180-200 makes a crispier skin and dark meat does fine over cooked a little.

While wings are cooking, melt the butter in the microwave then whisk together hot sauce and melted butter. Toss wings in the sauce to evenly coat.

Serve wings immediately with blue cheese or ranch dressing and celery and carrot sticks.

Chicken and Peas

This started as a recipe from my stepmom. She grew up on a farm in southern Indiana and would make this for us but hers was dredged in flour and more like an oven fried chicken. I am trying to be a bit more healthy and eat a low carb diet so I removed the flour and honestly, I don't miss it. This is still a really good chicken recipe thats super easy to make.
