Saw this huge Pomelo at the supermarket also called a pommel, pummel, or a Chinese grapefruit. I decided to see what I could make with it. Besides it tasting better than a standard grapefruit I was able to make this mean concoction with the addition of cinnamon, cloves, and tequila!
There are many variations of this fruit so depending on which you get you may have to alter the amount of simple sugar and juice. Even though the Pomelo is the fruit of choice here, depending on your location you may not be able to find this. I would recommend substituting either ruby red grapefruit juice or a ½ and ½ combination of orange and grapefruit juice if you can't find it.
In a small saucepan, combine the sugar, water, cinnamon stick, cloves and nutmeg. Bring to a simmer, stirring until the sugar is dissolved. Let cool, then strain into a sealable jar. You can keep this spiced simple syrup up to a week in the fridge.
Fill a cocktail shaker with ice. Add the pomelo juice, tequila and 2 tablespoons of the spiced simple syrup. Shake well and strain into an ice-filled collins glass. Garnish with lime ring and Pomelo pods for, if desired.
