Caesar Salad with Fresh Baked Croutons

March 2, 2020I saw them make this on an episode of Diners, Drive-Ins and Dives and wanted to give it a shot. Named after a character in Pinocchio this rustic pasta dish is supremely flavorful and quick and easy to make. Fresh tomatoes, garlic, basil, and parsley bring the sauce to life. As unappetizing as the anchovy paste sounds it is a necessary ingredient that bumps up the umami flavor to eleven. In the episode there was one ingredient I had to leave out of my version because it has never been appealing to me and that was the capers. Also, if you can make or get fresh spaghetti it will elevate this pasta dish to make any Italian envious.
Cook pasta to al dente following package directions in salted water. Drain the noodles and set aside.
Heat large sauce pan over medium high heat. Once hot, add olive oil. When olive oil is hot add the garlic and stir once. Next add the anchovy paste , chili flakes, and the cherry tomatoes and cook for 30 seconds. Finally add the tomato sauce, basil, and parsley.
Add the pasta to the saucepan just long enough to cover and heat back up. Serve with warm bread and garnish with more parsley.
