March 22, 2020What do you get when you cross an italian sub with a hamburger? An amazing sandwich! Lets start at the top. You take a nicely grilled hamburger then top it with italian meats and cheese. After that, butter and toast the bread. Then garnish with lettuce, tomato, pickle, and hot chopped boston peppers. If you haven't heard of this spread you probably haven't spent much time in New England. It is very popular at Italian delis on anything from hot dogs, hoagies and sandwiches. I am using Tallarico's Hot hoagie spread but you can use any type you like. Lastly, drizzle with freshly made italian dressing. You can use store bought dressing, but it's so easy why would you?
The italian meats are mortadella and genoa salami. The genoa salami is a nice standard salami and if you can't find that type at your grocery store any type of salami can be substituted. More people are unfamiliar with mortadella. Mortadella is a large Italian luncheon meat made of finely ground pork with small cubes of pork fat in it. It is flavoured with some or all of these; black pepper, olives, pistachios, or berries.
This recipe is for one but can easily be made for up to four people. You will make enough vinaigrette dressing for at least that many or you can use the remainder on a tossed salad. Another thing, unless you can find the smallest shallot in the world I would use the remainder for another recipe in the next few days or just leave it out of this recipe altogether.
To make the Cabernet Vinaigrette, whisk together the vinegar, olive oil, diced shallots and give it a try. Then add salt and pepper to taste.
Butter the cut side of the hamburger buns then toast them on the grill or in the oven. until golden brown. Set aside.
Set grill to medium high and preheat. Make the hamburger into a 1/3 to 1/2 pound patty and then lightly salt and pepper both sides. Grill the hamburger patties to your liking. I like mine a medium and that is about 3-4 minutes per side. Add the slice of cheese at the end of the cooking so it has time to melt. When finished remove from grill and place on bottom slice of bun.
Add all the garnishes next. On top of the patty add the mortadella, genoa salami, lettuce, tomato, pickle. Smear the chopped peppers on the top bun then, with a spoon, drizzle the vinaigrette on both stacks of the sandwich. Drizzle on the top bun and the stack with the lettuce and tomatoes. Flip the top bun onto the top of the sandwich and serve.
