December 5, 2016As a kid I always loved bologna sandwiches but I grew up in the Midwest where it was served cold with a slice of american cheese and wonder bread. Not that exciting as you get older. Recently I had it at a restaurant southern style where they treat it like a slice of ham and fry it in a skillet. That blew my mind and completely changes the flavor from some boring thing that kids like to eat into a sandwich that you will crave at nine o'clock on a Friday...with a beer...and tater tots!
Heat a large skillet to medium-high. In a small microwave safe dish melt 2 Tablespoons of the butter in the microwave, about 15 seconds on high. Mix in the garlic powder and brush on both sides of the bread. When skillet is hot fry the bread until golden brown on both sides. Set aside.
Add the remainder Tablespoon of butter to the skillet, once melted, place the bologna slices and fry about 2 minutes on each side or until the bologna is seared. Once bologna is cooked, stack the slices together and place 2 slices of Swiss cheese on the bologna. Cover and cook until melted.
While the cheese is melting, spread the mayonnaise on the insides of the bread. Stack the shredded lettuce and tomatoes on the bottom slice. When the cheese has melted, place the bologna and cheese on top of the tomatoes and add the top piece of bread. Cut in half and serve with tater tots.
