Cold dreary days in the winter are always made a bit brighter by comfort food. One of my favorites for lunch is a tuna or chicken melt. You can substitute a chicken salad like the one here or go for the fish. The Tuna fish salad used here is also great as a replacement for chicken salad and by itself on crackers. When I am having company I often make just one of these and share a sandwich half with a side of soup or salad. Like Tomato Basil Bisque or Chili.

1 (5 oz.) packet or can - Chunk Light or Albacore White Tuna (if using cans, chunked and drained)
¼ Cup mayonnaise
2 Tablespoons sweet pickle relish
⅛ teaspoon dill weed
salt and pepper to taste
2 slices bread
2 slices Tomato
2 slices provolone or Swiss cheese
(Optional) Just the green part of a green onion finely sliced
1Preheat broiler to 400 degrees. In a bowl, mix the tuna, mayonnaise, pickle relish, Dill. Season with salt and pepper.
2Place the bread slices on a baking sheet, and broil 1 minute in the preheated oven, until lightly toasted. Remove from heat, and spread with the tuna salad. Place 1 tomato slice over the tuna salad on each piece of bread then top with the cheese slices.
3Return layered bread to the preheated oven, and broil 3 to 5 minutes, until cheese is melted and a little bit browned and bubbly. Garnish with the green onions.
