April 8, 2019I have been messing with making a ground ham based burger for some time but it's really difficult to get it right. There is not a lot of flavor and it is easy to dry out the meat. Using really good ground pork and keeping it cold will give you a better chance for this to succeed. The more expensive pork will taste better and keeping it cold will keep the little fat it has from rendering out before it gets on the grill. That also keeps the burger from being to dense. The other ingredients are powerful enough too pull it all together, chipotle, adobo, garlic, cheese, and hardwood smoked bacon do that very well. You will have extra cheese sauce left over. Try it on other sandwiches or heat it up in the microwave and drizzle it on fries!
In a mixing bowl add the salt, pepper, chipotle powder, and garlic, to the ground pork. Mix until incorporated. Form into a patty and store in the refrigerator for at least 1/2 an hour so it can set.
In a food processor, make the cheese sauce by putting the chipotle, cheddar, and cream cheese in a food processor and process until smooth.
taste it and add more chipotles or adobo sauce if you want it hotter. It's OK if it is a little hotter than you are comfortable with, you only add a swipe to the sandwich. Set aside.
In a skillet over high heat cook the bacon until crispy. Remove and drain on paper towels.
Pre-heat grill on high and remove the patty from the fridge. lightly alt and pepper both sides of the patty then place on the hot side of the grill about 4 minutes, flip and cook about four more minutes or until the internal temperature is 160. Remove from heat and tent with foil.
Grill the buns until toasted, then build the burger. Starting with the bottom bun, spread adobo cheese sauce on the bun, bacon, burger, lettuce, top bun. Serve with fries or chips.
