The story behind this delicious recipe takes us back to the 1960s, when Teressa Bellissimo from a New York State restaurant introduced her creation – chicken wings smothered in her special sauce and served with celery and blue cheese or Ranch dressing on the side. Fast forward to today, and Buffalo wings have become the ultimate game day food, appearing at bars, restaurants, and even as takeout orders across America.
The Process
So, how do you make these crispy chicken wings without drowning them in oil? The answer lies in aluminum-free baking powder! Using baking powder for coating might seem strange at first, but this is precisely what ensures the super crispy skin on your wings. And don't worry – once cooked, there's no trace of the baking powder taste. Just remember to use baking POWDER and not baking SODA; they're significantly different!
To begin, simply coat the wings evenly with the mixture.
Next comes cooking: start by lining your baking sheet with parchment paper and arrange the coated chicken wings in a single layer for even heat distribution. Bake those wings while turning them halfway through cooking to achieve maximum crispiness all around.
Keep in mind that chicken wings can take approximately 50 minutes or longer to bake, so be sure to flip them for even browning.

Bake for 30 minutes; flip and continue to cook until crisp and golden brown, (about 20-30 minutes longer), until golden browned and crispy. If you have an internal thermometer you only have to cook to 170 degrees, to be safe but I feel going to 180-200 makes a crispier skin and dark meat does fine over cooked a little.
While wings are cooking, melt the butter in the microwave then whisk together hot sauce and melted butter. Toss wings in the sauce to evenly coat.
Serve wings immediately with blue cheese or ranch dressing and celery and carrot sticks.
