My Mom would make this from scratch with nothing more than mayo, ketchup, and pickle relish, even though I preferred anything that came with its own label over homemade. Obviously, my taste has changed and labels are not always what they are cracked up to be. Here is my jacked up version of a childhood favorite. Besides salads, you can’t make a decent Rubin without this dressing on the side.
5 ½ cups mayonnaise
½ cup ketchup
2 tbsp Tablespoons lemon juice
1 tbsp Tablespoon white vinegar
2 green onions
1 small shallot, finely diced
2 garlic cloves, minced
2 tbsp sweet pickle relish
1 tsp chopped fresh parsley
1 tsp dried dill
1 tsp black pepper
salt to taste
1In a bowl, whisk together mayonnaise, ketchup, lemon juice, and vinegar. Stir in green onions, red onions, garlic, pickle relish, parsley and dill. Season to taste with salt.
2Transfer to a sealed container and refrigerate until needed. Will keep up to one week.
