Tex-Mex

Smoked pulled pork, black beans, tomatoes, onion, jalapeños, sweet corn, and cheddar cheese piled atop a bed of tortilla chips and drizzled with classic BBQ sauce and ranch.

Ingredients

12 cups tortilla chips
4 oz smoked pulled pork
2 tbsp black beans, from can, drained (optional)
2 tbsp corn, from can, drained (optional)
2 tbsp tomato, diced
1 tbsp red onion, diced
1 tbsp jalapeño, dicedRemove the seeds first if you don't want it too hot
1 cup cheddar cheese, shreaded
BBQ sauce and peppercorn ranch for garnish

Directions

If the pork has been in the refrigerator or is cool, put in microwave safe bowl and warm up in microwave 15 seconds at a time stirring between heating till it is nice and hot.

Turn your broiler on high. Lay parchment paper in the bottom of a cookie sheet. Create an even layer of tortilla chips and distribute the warm pulled pork evenly on top. sprinkle on the beans, corn, tomatoes, onions, and jalapenos, Cover everything with the cheese.

Put under the broiler checking frequently and heat until the top layer of cheese is melted and pork ends start to crisp up slightly. About 30 seconds to 1 minute. It goes quick so keep your eyes on it. Once the cheese has melted nicely remove the cookie sheet from oven and drizzle the BBQ sauce and ranch on top. Serve immediately.

Ham-Burger with Adobo Cheese Sauce and Apple Smoked Bacon

I figured it's called a hamburger so it should be made with ham! Hamburger made with pork instead of beef. Because ground pork is a a bit light on flavor the other ingredients have to be powerful enough too pull it all together. Chipoltle adobo cheese sauce and hardwood smoked bacon do that very well.
