Mexican Chicken Chili
June 18, 2014Why have spin dip when you can have artichoke spin dip? You can even serve it in a hollowed out bread bowl.
In a small bowl, measure and combine the Parmesan cheese, red pepper flakes, salt, garlic powder, and ground red pepper. Set aside.
If using frozen spinach, cook it according to the package directions and drain well. In a small saucepan over medium heat, add the spinach and artichoke hearts. Cook until heated through, about 10 minutes.
Reduce the heat to low and add the cream cheese. Stir frequently until the cream cheese is fully melted and smooth.
Once the mixture is hot and bubbly, add the reserved Parmesan and spice mixture. Stir until everything is evenly combined and heated through.
Serve warm with crackers, chips, or toasted bread for dipping.
