April 6, 2014Who says singles have to sit at home feeling sorry for themselves on Valentines Day? This sexy little meal will have you feeling the love so you can get to that chick flick you have been waiting to see. It's fairly quick, easy, but the final dish looks and taste elegant. On the other hand, If you have a date and make this for him or her, you likely wont be single for long. This recipe is for two dishes.
Preheat oven to 350F. coat the bottom of an 8 x 8 inch baking dish with 1 tablespoon olive oil.
Heat marinara sauce in small saucepan over medium heat until bubbly, turn heat down and simmer, uncovered while continuing with the recipe.
Cook lasagna noodles, according to the package directions, until al dente, in salted, boiling water. When done, rinse with cold water and then drain.
Lay out lasagna noodles on cutting board. Top each with equal amounts of spinach then crumbled feta. Gently roll up each noodle then carefully cut each roll-up in half with a serrated knife and place ruffled-edge facing up in dish baking dish.
Drizzle with remaining olive oil. Cover dish with aluminum foil. Bake 15 to 20 minutes or until roll-ups are hot.
To serve, spread 1/2 of the hot marinara sauce in a shallow bowl; top with 3 roll-ups, ruffled ends up.
