March 31, 2014This is a variation on the recipe my dad would make for us as kids that he learned from his mother. I remember that once the meat was cooked, and again, after the chili powder and water has cooked down in the meat, he would put a little in a bowl and “taste” it to make sure it was coming along right. I still do that today. Even though it is a big recipe I make it this large because of the amount of time it takes to make and how easily it freezes. I put it in single serving Tupperware containers and freeze for later. Makes great workplace microwave lunches when its too cold to go outside.
2 large yellow onions
4 tbsp bacon drippings
½ lb pork sausage
3 ½ lbs ground beef
6 tbsp chili powder
2 tsp cumin
2 15.5 ounce cans pinto beans
2 15.5 ounce cans light red kidney beans
46 fl oz bottle tomato juice
46 fl oz water
