Garlic Smashed Potatoes
April 7, 2014Besides being a great Mexican food topper this pico de gallo is also great on its own as a salsa dip. With no unhealthy ingredients and also being uncooked, if you pair this with the right dipping chip it can be a very good flavored health food salsa.
4-6 ripe tomatoes, seeded and chopped coarsely
1 onion, chopped coarsely
1 jalapeno, seeded and chopped finely
¼ cup fresh cilantro, chopped
salt and pepper to taste
juice of ½ lime

Gently combine all the ingredients in a medium bowl. Refrigerate for 30 minutes before serving. Keeps in the refrigerator of up to a week.
