Had something similar to this at Zest in Indianapolis before it closed. It was my favorite thing to order there. Spread the sauce and cheese on your bread slices with a spoon and enjoy. Local goat cheese served over a bowl of marinara sauce and fresh warm bread. Make sure and use the soft feta or goat cheese not the crumbly kind. Also, if you want it to taste a bit fresher you can add chopped fresh herbs like basil to the sauce instead of the Italian seasoning. Sometimes I will just heat up 1½ cups of store bought marinara or spaghetti sauce and put the cheese on that. Instead of the warmed bread try it with crostinis, crackers, bagel chips, corn chips, pita, or garlic bread. You cant go wrong!
Depending on the size of your oven safe dish you may not use all of the sauce. Don't over fill it. The last think you want is boiling tomato sauce sloshing over your hand!
Preheat oven to 250 degrees. cut bread loaf crosswise without going all the way through into eatable pieces. About a half to an inch between cuts. Wrap tightly in aluminum foil and place on the middle rack in the oven.
While the bread is warming up. In a saucepan over medium heat, heat the tomato sauce, garlic and Italian seasoning until hot and bubbly. Taste and season with salt and pepper. Pour it into a small oven safe dish and top with the cheese. Even though this kind of cheese is more like a spread, float it on top of the sauce by "crumbling" it in your hands.
Move the bread to a bottom rack of the oven or take it out, it should be warm enough by now. Put the tomato dish on the top rack of the oven and crank up the broiler to high. Broil until the cheese starts to brown and get bubbly, about 3-5 minutes. Serve it in the oven safe dish and use it as a spread for the warmed bread. A spoon works best!
