October 13, 2014Plain simple hummus. To change thing up a bit I occasionally blend other flavors into it like a whole roasted garlic clove, a hand full of jalapeno slices, or roasted red peppers in oil. In the summer I serve this straight from the fridge but in the winter try heating it in the microwave 15 seconds at a time stirring in between until toasty, about 3 minutes.
place chickpeas, half the lemon juice, tahini, garlic, olive oil, and a few grinds of salt in a food processor. Blend until smooth. Scrape down the sides of the processor and then blend again. Taste and make adjustments to the salt, lemon, and olive oil until the flavor is correct. Blend again when done.
Toast the Pita bread until warm. Serve with sliced tomatoes, jalapenos, and olives.
