Marinara sauce with Toasted Goat Cheese and Bâton Bread

 8 inches or half a loaf of French bread
 1½ cups tomato sauce
 1 clove garlic slightly crushed
 ½ teaspoon Italian seasoning
 salt and pepper to taste
 2 ounces soft sheep or feta cheese

Preheat oven to 250 degrees. cut bread loaf crosswise without going all the way through into eatable pieces. About a half to an inch between cuts. Wrap tightly in aluminum foil and place on the middle rack in the oven.

While the bread is warming up. In a saucepan over medium heat, heat the tomato sauce, garlic and Italian seasoning until hot and bubbly. Taste and season with salt and pepper. Pour it into a small oven safe dish and top with the cheese. Even though this kind of cheese is more like a spread, float it on top of the sauce by "crumbling" it in your hands.

Move the bread to a bottom rack of the oven or take it out, it should be warm enough by now. Put the tomato dish on the top rack of the oven and crank up the broiler to high. Broil until the cheese starts to brown and get bubbly, about 3-5 minutes. Serve it in the oven safe dish and use it as a spread for the warmed bread. A spoon works best!
