Flavorful pulled chicken filling for tacos or other mexican dishes.
Lightly salt and pepper the chicken and let sit at room temperature for a half an hour. Oil grill grate then preheat grill to medium-high.
Grill chicken on one side until nice dark grill marks form, about 3-5 minutes. Turn chicken over and do the other side for another 3-5 minutes. Turn off grill, remove chicken and put in a slow cooker or crock-pot.
Add the garlic, onion , tequila, chicken broth, and liquid smoke. Simmer 2 hours. remove the chicken and let cool in cutting board until you can handle it. Shred with a couple forks then put back in crock pot until warmed back up. Add the lime juice and stir.
Serve in a taco shell or flour tortilla with all your favorite taco toppings, like cilantro, lettuce, tomatoes, cheese, taco sauce and sour cream.
